Homemade Fresh Yoghurt with EasiYo

There’s nothing more satisfying than making your own food from scratch. Make yogurt in three easy steps

You don’t just have to eat the yoghurt either, you can use it in cooking and baking. Plus, low fat Greek yoghurt is a great substitute for mayonnaise. Here are a couple of delicious recipes you can try with your favourite EasiYo yoghurt!

Passionfruit Parfait

Ingredients
EasiYo Greek Yogurt
EasiYo Passionfruit pulp or any passionfruit puree (or use any pureed fruit/fruit pieces of your choice)

Method
Layer EasiYo Greek Yogurt and the puree or pieces.
Top with nuts, coconut, flaked chocolate or cinnamon.

Savoury Pinwheel Scones

Scone Mix
3 cups self-raising flour
1 tsp baking powder
½ tsp salt
Pinch cayenne pepper
½ cup grated tasty cheese
1 cup milk
½ cup EasiYo Natural Yogurt

Filling
3 tblsp tomato paste
100 gr feta cheese crumbled
1 cup finely chopped bacon, ham or cooked chicken
2 cups chopped baby spinach
¾ – 1 cup grated cheese
2 x finely chopped spring onions
Milk to glaze

Method

Preheat oven to 210 deg Celcius. Grease baking tray.
Sift dry ingredients into a bowl, then stir in grated cheese, salt & cayenne peper. Add combined milk and yogurt and mix lightly with a knife until combined.
Turn dough on to lightly floured surface and knead lightly.
Roll dough out into a large rectangle about 5 mm thick.
Spread surface of rectangle with tomato paste and scatter with remaining ingredients. Roll up tightly to form a long roll.
Cut log into 3 cm pieces and arrange these spiral side up and touching one another on prepared baking tray. Brush surface of each scone with a little milk.
Bake 20 mins or until firm and golden brown. Serve warm

Berry Chocolate Slices

Ingredients
3 cups self raising flour
1&1/2 cups sugar
130 grams margarine
Plus extra 10 grams margarine
1 tsp baking powder
5 tablespoons EasiYo Boysenberry yogurt (or other berry yogurt)
2 eggs
2 tblsp golden syrup
2 cups frozen mixed berries
1 cup chocolate chips

Method
Preheat oven to 170 deg Celsius.
Grease slice tin and line base with baking paper.
Put flour and sugar into mixing bowl and rub margarine into mix until like fine breadcrumbs.
Divide mix into 2 and rub another 10 grams of margarine into one half of mix. Press this evenly into tin.
Add baking powder, yogurt, eggs and golden syrup to rest of mixture in a mixing bowl. Mix to a soft mix using a little extra yogurt if needed.
Fold in frozen berries and choc chips and spread mix even over base in tin.
Bake 45-55 mins until a skewer inserted into centre comes out clean.
Cool and slice.
Top with icing if wish or serve warm with EasiYo Yogurt Custard and whipped cream.
