Vegan Christmas tree biscuits: A festive showstopper

Ingredients
For the biscuits:
- 100g golden caster sugar
- 300g plain flour
- 200g vegan margarine or butter
For the vegan buttercream:
- 200g vegan margarine or butter
- 400g icing sugar
- 1 tsp green food colouring
- 1 tsp oat milk alternative (or your favourite plant based milk alternative)
Method
Make the biscuits:
- Preheat the oven to 175°C
- Mix the sugar, flour, and vegan margarine or butter together until it forms a dough
- Roll out and cut into your desired shapes
- Bake for 10–12 minutes
- Let them cool completely
Prepare the buttercream:
- Beat the vegan margarine or butter until smooth
- Gradually add the icing sugar – if the mixture is too stiff, add a splash of plant based milk alternative
- Once smooth, mix in the green food colouring
Assemble the trees:
- Pipe the buttercream onto the biscuits in circles and stack them to create a Christmas tree effect
- Decorate as desired for extra festive flair!
