Ingredients
- 1 tin aquafaba (liquid from chickpeas)
- 1 tbsp sugar
- 140g dark chocolate
Method
- Pour the aquafaba into a bowl and whisk with an electric whisk until soft peaks form.
- Add the sugar and continue whisking until the mixture becomes thick and glossy — this can take up to 10 minutes, so don’t give up!
- Melt the dark chocolate and allow it to cool slightly.
- Gently fold the chocolate into the aquafaba, keeping as much air in the mixture as possible.
- Spoon into ramekins and chill in the fridge until set.
