How to make vegan Easter egg nests
Melt the butter & marshmallows
In a saucepan over low heat, melt the plant based butter. Once melted, gradually stir in the vegan marshmallows. Stir continuously until fully melted and smooth.
Mix in the cereal
Remove the saucepan from the heat and gently fold in the puffed rice cereal. Stir until the cereal is well coated in the marshmallow mixture.
Shape the nests
Spoon portions of the mixture into cupcake cases or onto a lined baking sheet. Using a spoon, shape them into small nests with an indentation in the centre.
Let them set
Allow the nests to cool completely at room temperature. This will help them firm up and hold their shape.
Add the chocolate eggs
Once the nests have set, place a vegan chocolate egg in the centre of each nest.
The perfect treat
These vegan Easter egg nests are the perfect festive treat for Easter gatherings, gift boxes, or just a fun baking project. They are light, crispy, and sweet with a hint of chocolate – a treat everyone will love!
