Celebrate Pancake Day the ethical way
Pancake Day is the perfect excuse to indulge a little but it doesn’t have to mean compromising your values. This simple vegan recipe uses organic, fair trade, and ethically sourced ingredients, so you can enjoy every bite with a clear conscience.
Simple vegan pancakes
Ingredients (serves 2–3):
- 100g organic plain flour
- 1 tbsp Fairtrade sugar
- 1 tsp baking powder
- 1 pinch of sea salt
- 200ml organic oat milk alternative (or any milk alternative of your choosing)
- 1 tbsp organic rapeseed oil + extra for frying
- Optional toppings: fresh berries, fairtrade chocolate spread, organic maple syrup
Method
- In a bowl, mix the flour, sugar, baking powder and salt
- Whisk in the milk alternative and oil until smooth
- Let the batter rest for 5 minutes (this is an optional step)
- Heat a non-stick pan over medium heat and lightly brush with oil
- Pour a small ladle of batter into the pan and cook 1–2 minutes until bubbles form. Flip and cook another 1–2 minutes
- Repeat with remaining batter
- Serve with your favourite ethical toppings
Tips for an ethical Pancake Day
Choose organic, fairtrade, and local ingredients wherever possible. Experiment with toppings like nuts, fruit, or a drizzle of ethical chocolate to make it extra special. Make it a shared activity, pancakes are even better when you cook (and eat) together!
