National Vegetarian Week

Next week is National Vegetarian Week. This annual awareness raising campaign promotes innovative and inspirational vegetarian cooking, and awareness of the benefits of a meat-free diet. Celebrated by the Vegetarian society since 1992, National Vegetarian Week events are held around the country by schools, offices, big corporations and community group. Check the map to see what events are being held near you.

If you’re not actually a vegetarian, vegetarian cookery can still tantilise the taste buds. We’ve selected one of our favourite vegetarian recipes from the National Vegetarian Week website. We’d love to know what you think!

Dressed Tofu Kebabs:

250g plain tofu, drained and pressed
150ml mayonnaise
15ml/1tbsp mustard
15ml/1tbsp curry paste
1 clove garlic, crushed
2.5cm/1” piece fresh root ginger, peeled and grated
Salt and black pepper
16 cherry tomatoes
8 shallots, halved
16 button mushrooms
Cooking oil for brushing
8 skewers
15ml/1tbsp mango chutney

To serve:
225g/8oz Basmati rice, cooked
