Buckwheat is gorgeous made into porridge- I do mine in my slow cooker, with sultanas, orange and ginger zest, and "milk" of any kind, with a splash of fruit juice. It makes a very hearty start to the day! I usually pre-roast it, before using although it's tasty as is), by spreading it on baking trays, then baking it in the oven for 10 mins, when I'm cooking anything else.

I love buckwheat, and this Suma prepack is great value for an organic product. If you've never tried buckwheat, I'd really recommend it as a quick and healthy starch (cooks in 15 minutes, and contains lots of capillary-strengthening rutin). To get the best earthy, nutty flavour, stir the buckwheat in a dry pan for a couple of minutes until it starts to smell toasty, then add the water. Delicious with a few fried mushrooms, a sprinkling of cheese and a good grind of pepper.
