Makes and good gluten-free base for cheesecake (I don't mmake the baked variety) by gently cooking whilst turning constantly in a pan until golden, mixing with melted butter, some caster sugar and a couple of drops of organic orange essential oil (optional) and then pressing mix down in the base of a tin with removable outer to make a firm base (but not really compacted!). You can add some fairly lightly crushed gluten-free breakfast cereal to the mix for crunch if desired. Needs to be cooled, prefereably in fridge, before adding the cheesecake mix. Can leave out the caster sugar in the base if deisred, but cheesecake is sweet anyhow!
Good for thickening kormas or other spicy sauce-based foods.
