With a rich butterscotch flavour, Biona Coconut Palm Sugar is the perfect sweetener for baked goods, desserts, and drinks. It is especially suited to everyday cooking due to its low melt temperature and high burn temperature. This organic product is unprocessed, and also has a much lower GI than regular cane sugar.

This is great sugar and I think is sweeter than cane sugar (I use about half as much). I was concerned about the association with 'palm' given the problems of palm oil contributing to deforestation. Great news!! - This is unfounded. Here's a response from the company (investigated by Ethical Superstore):
Biona has advised of the following: There is no deforestation in regards to the coconut sugar. The farmers follow a process of taking only what is needed from the trees so that they can continue to produce organic products for years to come while minimising environmental impact. Collecting the sap gives valuable work for the locals and ensures that they look after the trees as they earn their living from them. It's a eco project which helps the local communities involved. The farmers use a selection process that is crucial for the longevity of the tree and to retain the natural growth and process of the environment.

1. A cut is made on the flower of the coconut palm and the liquid sap is collected into bamboo containers.
2. The farmer climbs the tree in the morning and in the late afternoon. He changes the bamboo around the blossom of the tree, and brings down the sap.
3. The sap is then cooked immediately for 3-4 hours until it is solid.
4. The sugar is then crushed with a coconut shell, sieved and put into bags.

Q: This product does not contain palm oil which is responsible for deforestation, but as it is derived from palm it is presumably equally responsible. It is disingenuous to credit it as being palm oil-free but not address it's environmental impact (or lack of).
A: Hi there,
Many thanks for your query and apologies for the delay. This coconut sugar is from the liquid nectar of the coconut blossom, which grows on a different species of tree than that from which palm oil is derived.
