Ingredients<\/h2>\n

500g of Tofu<\/a> cut into 2cm chunks
\n2 large onions, chopped; 2 garlic cloves, crushed
\n400ml can Fairtrade coconut milk<\/a>
\n5 tbsp (approx half a 285g jar) Thai green curry paste<\/a>
\n1 tbsp soy sauce<\/a>
\n1 tbsp green peppercorns in brine, rinsed and dried (optional)
\nZest and juice of 1 lime, plus extra for garnish
\n1 tbsp cooking oil + 1 tbsp sesame oil<\/a>
\n1 tbsp dried coriander leaves
\n2 tbsp finely chopped fresh green chillies, seeds removed
\n4 tbsp finely chopped fresh coriander leaves<\/a>
\nKilombero rice (white<\/a> or brown<\/a>) to serve<\/p>\n

Method<\/h2>\n

\"Fair1. Heat oil in pan and gently fry onions and garlic, add dried coriander and continue cooking for 5 mins.<\/p>\n

2. Add the thick coconut milk from the tin plus green curry paste. Cook for 15 minutes stirring frequently.<\/p>\n

3. Add remainder of coconut milk, lime zest and juice, soy sauce and green peppercorns (if using). Stir until boiling, then simmer on a low heat uncovered for 35-45 mins until the gravy is rich and thick.<\/p>\n

4. Rinse the tofu, then cut it into 2cm cubes. Press the cubes gently between paper towels to remove excess moisture and add to the curry.<\/p>\n

5. Stir in the chopped chillies and coriander and simmer for 5 minutes more.<\/p>\n

6. Serve with rice. Garnish with lime or lemon wedges and
\ncoriander leaves.<\/p>\n
