{"id":8392,"date":"2016-12-23T09:00:57","date_gmt":"2016-12-23T09:00:57","guid":{"rendered":"http:\/\/www.ethicalsuperstore.com\/blog\/?p=8392"},"modified":"2016-12-28T15:58:15","modified_gmt":"2016-12-28T15:58:15","slug":"christmas-nut-roast-recipe","status":"publish","type":"post","link":"https:\/\/www.ethicalsuperstore.com\/blog\/recipes\/christmas-nut-roast-recipe\/","title":{"rendered":"Christmas Nut Roast Recipe"},"content":{"rendered":"<h4>Ingredients<\/h4>\n<ul>\n<li>1 tbsp olive oil\n<\/li>\n<li>15g butter\n<\/li>\n<li> 1 large onion, finely chopped\n<\/li>\n<li>2 sticks celery, finely chopped\n<\/li>\n<li>2 garlic cloves, finely chopped\n<\/li>\n<li>200g chestnut mushrooms, finely chopped\n<\/li>\n<li>1 red pepper, halved, deseeded and finely diced\n<\/li>\n<li>1 large carrot, grated\n<\/li>\n<li>1 tsp dried oregano\n<\/li>\n<li>1 tsp smoked paprika\n<\/li>\n<li>100g red lentils\n<\/li>\n<li>2 tbsp tomato pur\u00e9e\n<\/li>\n<li>300ml vegetable stock\n<\/li>\n<li>100g fresh breadcrumbs\n<\/li>\n<li>150g mixed nuts such as walnuts, pecans, hazelnuts and Brazil nuts, roughly chopped\n<\/li>\n<li>3 large eggs, lightly beaten\n<\/li>\n<li>100g mature cheddar, grated\n<\/li>\n<li>handful flat leaf parsley, finely chopped<\/li>\n<\/ul>\n<h4>For the tomato sauce:<\/h4>\n<ul>\n<li>2 tbsp extra virgin olive oil\n<\/li>\n<li>2 garlic cloves, finely sliced\n<\/li>\n<li>1 sprig rosemary\n<\/li>\n<li>400ml passata<\/li>\n<\/ul>\n<h4>Method<\/h4>\n<p><strong>1.<\/strong> Preheat the oven to 180C\/fan 160C\/Gas 4. Line the base and sides of a 1.5 litre loaf tin with parchment paper.<\/p>\n<p><strong>2.<\/strong> Heat the oil and butter in a large frying pan and cook the onion and celery for about 5 mins until beginning to soften. Stir in the garlic and mushrooms and cook for a further 10 mins.<\/p>\n<p><strong>3.<\/strong> Stir in the red pepper and grated carrot and cook for about 3 mins then add the oregano and paprika and cook for just a minute.<\/p>\n<p><strong>4.<\/strong> Add the red lentils and tomato puree and cook for about 1 min, then add the vegetable stock and simmer over a very gentle heat until all the liquid has been absorbed and the mixture is fairly dry. Set aside to cool.<\/p>\n<p><strong>5.<\/strong> Finally, stir in the breadcrumbs, nuts, eggs, cheese and parsley and a pinch of salt and some ground black pepper. Stir to mix well then spoon the mixture into the prepared tin and press down the surface . Cover with foil and bake for 20 mins, then remove the foil and bake for a further 10\u201315 mins until firm when pressed gently.<\/p>\n<p><strong>6.<\/strong> Meanwhile, to make the sauce, heat the oil very gently then add the garlic slices and rosemary sprig and heat without colouring. Pour in the passata and add a pinch of salt and some ground black pepper. Simmer gently for just 15 mins.<\/p>\n<p><strong>7.<\/strong> Allow the loaf to cool in the tin for about 10 mins then turn out onto a serving board or plate.
