Maybe it\u2019s just me, perhaps I\u2019m somewhat unusual in this respect, but I tend to be a little sceptical of simple ideas. I really should qualify that, I\u2019m lacking in confidence when they are my<\/em> simple ideas.\u00a0 With an almost alarming regularity I find it easier to convince myself that it won\u2019t work rather than trying it and seeing what happens.\u00a0 Not so this week when I took the plunge and initiated the Ethical-SOUPer Store challenge.<\/p>\n

My basic idea was to try and beat the credit crunch by sharing an ethical lunch.<\/p>\n

Lately I\u2019ve found myself thinking about how much money and time I spend on lunch.\u00a0 Possibly it\u2019s the current media deluge on all matters financial, or the fact that every day I pass a poster for Delia\u2019s Frugal Food.\u00a0 Maybe it\u2019s that it\u2019s so cold to venture out and wait in a queue, and in my case always get stuck behind that<\/em> person. Let\u2019s face it in the name of \u2018convenience\u2019 (the irony of this term assaults me as I type it) we can pay an inflated price for food which just doesn\u2019t come close to that which we know we\u2019re capable of making for ourselves.\u00a0 So I talked myself out of talking myself out of it and sent a message to all of our staff to see if I could persuade 4 others to join me in each taking a day of the week and making soup for each other. (Amazingly within 10 minutes I had four co-conspirators).<\/p>\n

\"\"<\/a>For a bit of fun I\u2019d suggested that we adopted a \u2018Come Dine With Me\u2019 approach and give each other a rating for our efforts based on taste, ethical credentials and value for money.\u00a0 We\u2019d all only have to prepare (and pay for) one lunch but be fed for a week.\u00a0 We\u2019d share our recipes \u2013 so learn four new ones.\u00a0 It\u2019d taste far better on a cold day than sandwiches.\u00a0 What I hadn\u2019t counted on, but was delighted with, was the atmosphere as we sat down to eat.\u00a0 It was so refreshing to not only enjoy \u2018proper\u2019 food but the tone was so much more relaxed \u2013 no one was feeling the after effects of queuing etc it felt different, relaxed, liberating.<\/p>\n

I can\u2019t recommend it enough!\u00a0 Eat well, stress less and laugh \u2013 a lot.<\/p>\n

Here\u2019s my recipe \u2013 it\u2019s only my third ever soup \u2013 so it\u2019s simple to say the least.\u00a0 Total cost of ingredients (excluding spices which I had in the cupboard anyway) was just under \u00a31.50 \u2013 that\u2019s 30p per portion \u2013 and a saving for me of about \u00a38.50 for the week \u2013 result.<\/p>\n

Ridiculously Easy Carrot and Coriander Soup.<\/strong>
\nIngredients <\/em>
\n500g carrots
\n400g potato
\n1 x largish onion (approx 300g before I peeled it)
\n1 x tablespoon olive oil
\n2 pints of vegetable stock
\nCorriander, turmeric, cumin and chilli powder
\nI finely chopped the onion and put it in a pan with the olive oil, \u00bd teaspoon ground coriander<\/a> and \u00bd teaspoon of chilli powder<\/a>.\u00a0 I put it on a low heat and covered it \u2013 so it sweats- for about 10 minutes.\u00a0 As this was going on I diced the carrots (washed but unpeeled) and the potatoes (peeled) \u2013 I diced them small \u2013 approx 1cm cubes.
\nChecking the onion was soft I then added the stock (made with 2 x Kallo vegetable stock cubes<\/a>) the diced carrot and potato, then a bit of extra seasoning \u2013 a further \u00bd teaspoon of coriander, and a sprinkling of ground cumin<\/a> and ground turmeric<\/a> (as I wanted to feel like a proper chef rather than a soup novice busking) then upped the heat so that it simmered \u2013 never allowing it to boil.\u00a0 After around half and hour \u2013 and a few test squeezes against the pan side with the wooden spoon to make sure the carrot had softened I turned off the heat and mashed it by hand, in the pan with a potato masher.\u00a0 I then left it for half an hour to rest.\u00a0 Then I used a hand blender to blend it in the pan to a smooth consistency. (Hand blending is not essential \u2013 it\u2019s just the only type of food processor in our house).
\nI prepared it the day before and then warmed it up on the hob to serve.<\/p>\n

Very simple, very reasonable cost, all organic and suitable for vegans.<\/p>\n

I\u2019m confident that at the end of day one I\u2019m in the lead.<\/p>\n
