Here\u2019s a little recipe idea if you want a little change.<br \/>\n<!--more--><\/p>\n<p>\n<img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/www.ethicalsuperstore.com\/blog\/wp-content\/uploads\/cupcakes-1.jpeg\" alt=\"cupcakes 1\" width=\"300\" height=\"226\" class=\"alignleft size-full wp-image-5973\" \/>Now I love baking although I\u2019m not particularly creative in the kitchen, I just like to make vanilla cupcakes because they are delicious. But I had a dilemma, I\u2019ve been vegetarian for over a year now and I\u2019m thinking about going vegan, but what about the cupcakes! Fortunately after trawling the internet I found a simple recipe to make cakes without eggs or butter and decided I try it out on the ethicalsuperstore.com team.<br \/>\n<\/p>\n<div align=\"center\"><strong>Recipe:<\/p>\n<p>250g vanilla soya yoghurt<br \/>\n80ml sunflower oil<br \/>\n2 tsp vanilla extract<br \/>\n150g caster sugar<br \/>\n150g self-raising flour<br \/>\n\u00be tsp bicarbonate of soda<br \/>\n\u00bd tsp baking powder<\/strong><\/p>\n<p>1 Preheat the oven to 150C\/300F\/gas mark 2 and line a cupcake or fairy cake tin with paper cases.<\/p>\n<p>2 Whisk the wet ingredients together in a mixing bowl, then sift in the dry ingredients and mix well.<\/p>\n<p>3 Spoon into the cases and bake for 15-25 minutes depending on the size of your cases, until just firm on top.<\/p><\/div>\n<p>\n<img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/www.ethicalsuperstore.com\/blog\/wp-content\/uploads\/cupcakes-2.jpeg\" alt=\"cupcakes 2\" width=\"200\" height=\"267\" class=\"alignright size-full wp-image-5979\" \/>I used Alpro Vanilla Soya Yoghurt and organic sunflower oil since it\u2019s organic September! I just used regular icing sugar to decorate, I was considering making a vegan buttercream but the cakes were quite sweet already so that\u2019s a recipe for another day! <\/p>\n<p>The general consensus here in the office is that you can\u2019t even tell the difference! Everyone who has tried one has said that to me \u2013 and that they are delicious.
