Healthy Free From eating can present a challenge with so many recipes based around gluten flours and serious amounts of sugar\u2026but with a few creative tweaks there\u2019s no need to miss out.<!--more--><br \/>\nThis week\u2019s gluten free blog brings together two Christmassy comfort foods\u2026\u2026rustic mince pies with a crunchy almond crust&#8230;..and the ultimate winter dessert (or even better, breakfast!), apple crumble, here with a nutritious seed and nut topping and festively flavoured with cinnamon, cloves, orange and cranberry.<\/p>\n<h2><a href=\"http:\/\/www.ethicalsuperstore.com\/blog\/wp-content\/uploads\/foodie.png\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-5403 alignright\" alt=\"Christmas Comfort Food\" src=\"http:\/\/www.ethicalsuperstore.com\/blog\/wp-content\/uploads\/foodie-300x218.png\" width=\"240\" height=\"174\" srcset=\"https:\/\/www.ethicalsuperstore.com\/blog\/wp-content\/uploads\/foodie-300x218.png 300w, https:\/\/www.ethicalsuperstore.com\/blog\/wp-content\/uploads\/foodie.png 488w\" sizes=\"auto, (max-width: 240px) 100vw, 240px\" \/><\/a>Almond crunch mince pies<\/h2>\n<p>Ingredients (makes 6 mince pies)<\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li>100g ground almonds<\/li>\n<li>50g whole almonds, chopped quite finely (or just use 150g <a href=\"http:\/\/www.ethicalsuperstore.com\/products\/suma\/suma-prepacks---organic-almonds-250g\/\">ground almonds<\/a>)<\/li>\n<li>Generous pinch <a href=\"http:\/\/www.ethicalsuperstore.com\/products\/geo-organics\/geo-organics-atlantic-fine-ground-sea-salt\/\">sea salt<\/a><\/li>\n<li>1tbs good <a href=\"http:\/\/www.ethicalsuperstore.com\/products\/suma\/suma-organic-extra-virgin-olive-oil-500ml\/\">olive oil<\/a><\/li>\n<li>1 tbs organic virgin <a href=\"http:\/\/www.ethicalsuperstore.com\/products\/biona\/biona-organic-virgin-coconut-oil-400g\/\">coconut oil<\/a> (melted)<\/li>\n<li>1 tbs <a href=\"http:\/\/www.ethicalsuperstore.com\/products\/equal-exchange\/equal-exchange-organic-clear-honey-500g\/\">Fairtrade honey<\/a><\/li>\n<li>1 tsp vanilla essence<\/li>\n<li>Mincemeat (my favourite ready-made mincemeat is by Infinity foods: organic, sugar and suet free)<\/li>\n<li>Small handful flaked almonds<\/li>\n<\/ul>\n<p>Preparation method<\/p>\n<ol>\n<li>Preheat oven to 170\u00b0c<\/li>\n<li>Rough chop the slivered almonds and combine in a bowl with ground almonds and salt<\/li>\n<li>In a second bowl whisk together the oils, honey and vanilla. Stir into the almond mix and bring together to form a moist, course dough<\/li>\n<li>Split dough into 6 even sized pieces and press each into a non-stick muffin tin to form the 6 pie crust shells<\/li>\n<li>Blind bake for 8-10 minutes until just golden brown. Cool in the baking tray prior to filling<\/li>\n<li>Fill shells with mincemeat and top with flaked almonds<\/li>\n<li>Cook for a further 10 minutes until warmed through<\/li>\n<li>Serve warm from the oven or cool in the baking tray for 10 minutes and then on a wire rack<\/li>\n<\/ol>\n<h2>Christmas spiced crumble<\/h2>\n<p>Ingredients (serves 4)<a href=\"http:\/\/www.ethicalsuperstore.com\/blog\/wp-content\/uploads\/crumble.png\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-5412 alignright\" alt=\"Crumble\" src=\"http:\/\/www.ethicalsuperstore.com\/blog\/wp-content\/uploads\/crumble-300x225.png\" width=\"240\" height=\"180\" srcset=\"https:\/\/www.ethicalsuperstore.com\/blog\/wp-content\/uploads\/crumble-300x225.png 300w, https:\/\/www.ethicalsuperstore.com\/blog\/wp-content\/uploads\/crumble.png 312w\" sizes=\"auto, (max-width: 240px) 100vw, 240px\" \/><\/a><\/p>\n<ul>\n<li>4 large apples of your choice (I like Braeburn for this)<\/li>\n<li>Juice and zest of 1 large or 2 small organic oranges (or use clementines)<\/li>\n<li>1 large cinnamon stick<\/li>\n<li>6-8 cloves<\/li>\n<li>Handful of fresh or frozen <a href=\"http:\/\/www.ethicalsuperstore.com\/products\/suma\/suma-prepacks-organic-cranberries-125g\/\">cranberries<\/a> (optional)<\/li>\n<\/ul>\n<p>Crumble topping<\/p>\n<ul>\n<li>60g raw nuts to suit your preference (2 or more of <a href=\"http:\/\/www.ethicalsuperstore.com\/products\/suma\/suma-prepacks-organic-walnuts-500g\/\">walnuts<\/a>, pecans, <a href=\"http:\/\/www.ethicalsuperstore.com\/products\/suma\/suma-prepacks-organic-hazelnuts-250g\/\">hazelnuts<\/a>, <a href=\"http:\/\/www.ethicalsuperstore.com\/products\/equal-exchange\/equal-exchange-whole-cashew-nuts-250g\/\">cashew nuts<\/a>, brazil nuts)<\/li>\n<li>25g <a href=\"http:\/\/www.ethicalsuperstore.com\/products\/suma\/suma-prepacks-organic-sunflower-seeds-1000g\/\">sunflower seeds<\/a><\/li>\n<li>25g <a href=\"http:\/\/www.ethicalsuperstore.com\/products\/suma\/suma-prepacks-organic-pumpkin-seeds-500g\/\">pumpkin seeds<\/a><\/li>\n<li>25g unsweetened desiccated coconut<\/li>\n<li>25g dried cranberries<\/li>\n<li>1 tbs <a href=\"http:\/\/www.ethicalsuperstore.com\/products\/biona\/biona-organic-virgin-coconut-oil-200g\/\">virgin coconut oil<\/a><\/li>\n<li>1 tbs <a href=\"http:\/\/www.ethicalsuperstore.com\/products\/equal-exchange\/equal-exchange-organic-clear-honey-500g\/\">Fairtrade honey<\/a><\/li>\n<li>1 heaped tsp ground cinnamon<\/li>\n<li>2 tsp vanilla essence<\/li>\n<\/ul>\n<p>Preparation method<\/p>\n<ol>\n<li>Preheat oven to 170\u00b0c (unless making in advance to heat later)<\/li>\n<li>Peel (if preferred), core and chop the apples into small pieces. Put in a saucepan with the orange juice, cinnamon stick, cloves and cranberries if using. Cover and simmer for 10-15 minutes until tender<\/li>\n<li>Gently warm coconut oil, ground cinnamon, vanilla essence, honey, orange zest and cranberries, stirring while the oil melts<\/li>\n<li>Put all other ingredients in a food processor and pulse a few times to chop coarsely, alternatively chop by hand.<\/li>\n<li>Add the warmed oil mix to the chopped nuts and seeds and stir to thoroughly to coat<\/li>\n<li>Put the apples into a baking dish or individual ramekins and top with the crumble mixture<\/li>\n<li>Bake for 12 \u2013 15 minutes until lightly golden, it may take longer if cooking from cold<\/li>\n<\/ol>\n<p>Nicky Robinson combines her work in fair trade with other life-long passions for natural good food and positive healthy living.
