Just to be clear the SAD* I\u2019m talking about here is Seasonal Appetite Desires<\/strong>.<\/p>\n

I don\u2019t know about you, but as the temperature drops and daylight hours shorten I find myself craving different foods to those I cherish in summertime.\u00a0 In July, \u2018crispy organic lettuce drizzled with vinaigrette dressing\u2019, is a phrase guaranteed to provoke an almost Pavlovian response within me, but come November my palate seems to change as radically as the weather.\u00a0 It\u2019s goodbye to \u2018fresh\u2019 and \u2018light\u2019 and hello to \u2018hearty\u2019 and \u2018rich\u2019! Whilst I\u2019m not quite ready to start my menu planning for Christmas dinner just yet, comfort food has established itself firmly at the top of my menu wish list.
\nWe all have our own favourite comfort food, that dish which we adore, not only for its pleasing taste but also for the sense of contentment that it delivers. For me it has to be Rice Pudding, and here\u2019s my absolute favourite recipe for it. It\u2019s inexpensive, uncomplicated, and easy to prepare, especially with the slow cooker.\u00a0 I just can\u2019t recommend it enough ,except, did I mention that it\u2019s organic and suitable for vegans too?
\nIngredients:<\/strong>\"\"
\n1L Provamel organic Vanilla flavoured Soya Milk<\/a>
\n115g Suma organic Arborio Rice (uncooked)<\/a>
\n95g Equal Exchange Fairtrade & Organic Raw Cane sugar<\/a>
\n20g Suma Organic Desiccated Coconut<\/a>
\n1 tsp Steenbergs Vanilla Extract Fairtrade 100ml<\/a>
\n0.5 tsp Suma Organic ground Cinnamon<\/a>
\na dash of salt
\n1.5 tbsp vegan margarine<\/p>\n

Preparation:<\/strong>
\nThis is so easy.\u00a0 Just combine all ingredients in a slow cooker.<\/p>\n

(I used the Morphy Richards Ecolectric Slow Cooker<\/a>)
\nCook on high for 5 hours. Stir once every hour, until the desired consistency is reached.
\nCooking time may vary, depending on your slow cooker and the consistency which you like your rice pudding.
\nGrate some of your favourite dark chocolate on top before serving, (I used Organic Seed & Bean Company Dark Fairtrade Chocolate Bar<\/a>, 60g)<\/p>\n

Serves:<\/strong> 4\u00a0 hearty portions.
