\"\"<\/a>Lunchtimes in our office have seemed a little tame recently.\u00a0 Following the success of the recent Ethical SOUPerstore challenge<\/a>, when a number of us demonstrated it was possible to beat the credit crunch by sharing a tasty and ethical lunch, we\u2019ve been developing a culinary itch we just had to scratch.\u00a0 But how?
\nEnter the Morphy Richards Ecolectric Slow Cooker<\/a>.<\/p>\n

Slow cooking has much to recommend it
\n\u2022\u00a0\u00a0\u00a0 Convenient \u2013 fits a busy lifestyle, put all you ingredients in that morning and come home to a delicious meal in the evening.
\n\u2022\u00a0\u00a0\u00a0 Flavoursome \u2013 Slow cooked food is cooked in its own juices fully absorbing all flavours.
\n\u2022\u00a0\u00a0\u00a0 Economical \u2013 Low levels of energy are used to power a slow cooker.
\n\u2022\u00a0\u00a0\u00a0 Versatile \u2013 Cook everything from curry, soup, chowder, casserole and even desserts.<\/p>\n

Environmentally, slow cooking has advantages too – slow cookers use low levels of energy, making them economical to run (rather than heating a large conventional oven). Better still the Morphy Richards claim that this Ecolectric Slow Cooker uses up to 44% less energy than other slow cookers on the market.<\/p>\n

So four of us have got together to give it a thorough trial. . .<\/p>\n

<\/p>\n

As with the soup challenge we\u2019ve drawn inspiration from \u2018Come Dine With Me<\/em>\u2019, and the dish of the week will be announced after all of us taking part have rated each other\u2019s creations based upon taste, value for money and ethical credentials.<\/p>\n

I was first to cook, as a novice at slow cooking, I was fairly pleased with how my vegan chilli turned out, after a disastrous \u2018dress rehearsal\u2019 at the weekend.\u00a0 I now have learned an extremely valuable lesson \u2013 \u2018If adapting an existing recipe from conventional cooking, you may need to cut down on the amount of liquid used. Liquid will not evaporate from the slow cooker to the same extent as with conventional cooking.\u2019<\/em>
\nBetter make that two<\/em> valuable lessons \u2013 it\u2019s best to read the instructions first.<\/p>\n

Anyway, lessons learnt, here\u2019s my recipe for Lazy Three Bean Chilli;
\nIt\u2019s suitable for Vegans, though vegetarians can add a touch of soured cream or grated cheese if desired. I did grate some vegan friendly Dark Chocolate<\/a> to boost flavour but no one gave this a try this lunchtime.<\/p>\n

Ingredients<\/strong>:
\n1 x large organic carrot grated
\n2 x medium organic peppers (I used one green and one yellow just to add colour)
\n1 x medium organic onion
\n1 x 400g tin of organic kidney beans<\/a>
\n1 x 400g tin of organic butter beans<\/a>
\n1 x 400g tin of organic blackeye beans<\/a>
\n1 x 400g tin of organic chopped tomatoes<\/a>
\n1 x 690g Jar of organic Passata<\/a>
\n1 tsp organic chilli powder<\/a>
\n1 tsp organic cumin powder<\/a>
\n2 x gloves of garlic
\n1 dash of vegan red wine<\/a> (optional)<\/p>\n

Method<\/strong>:
\nChop the onion extremely finely (if the onion is chopped roughly it will require saut\u00e9ing ) and grate the carrot. Chop the pepper.
\nOpen the beans and rinse, then add to the onion, pepper and carrot. Add spices and mix before adding the passata and chopped tomatoes (drain off some of the tomato juice before adding).
\nIf you have some available add a liberal dash of red wine.
\nStir well, add the lid and cook on a medium heat for 5\u00bd\u00a0 hours.
\nIt\u2019s now ready to serve.
\nAs I wanted a simple one pot dish \u2013 I served with tortilla chips<\/a> rather than rice \u2013 but I\u2019m sure it\u2019ll work well with rice if you have the inclination.<\/p>\n

Serves 6<\/strong> at a cost of just \u00a31.50 per person. (That includes tortilla chips but not the wine, chilli or cumin)<\/p>\n
