{"id":11007,"date":"2020-10-06T10:14:38","date_gmt":"2020-10-06T09:14:38","guid":{"rendered":"https:\/\/www.ethicalsuperstore.com\/blog\/?p=11007"},"modified":"2021-01-11T17:01:25","modified_gmt":"2021-01-11T17:01:25","slug":"jenuinely-vegans-spooky-spider-salad","status":"publish","type":"post","link":"https:\/\/www.ethicalsuperstore.com\/blog\/recipes\/jenuinely-vegans-spooky-spider-salad\/","title":{"rendered":"Jenuinely Vegan&#8217;s Spooky Spider Salad"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">Serves 2<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Check out Jenuinely Vegan&#8217;s Instagram <a href=\"https:\/\/www.instagram.com\/jenuinely.vegan\/\" target=\"_blank\" rel=\"noreferrer noopener\">here<\/a><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ingredients<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><a href=\"https:\/\/www.ethicalsuperstore.com\/products\/quinola-mothergrain\/quinola-mothergrain-pearl---red-express-organic-ready-cook-quinoa-250g\/\">Quinola red and white quinoa<\/a><\/li><li>Two medium sweet potatoes chopped (or simply swap this out for squash for convenience)<\/li><li>One medium head of broccoli (chopped into bite-sized pieces)<\/li><li>A handful of pomegranate seeds<\/li><li>A handful of greens (I used chopped rocket or spinach)<\/li><\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>For the hummus<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1 can of <a href=\"https:\/\/www.ethicalsuperstore.com\/products\/mr-organic\/mr-organic-chickpeas---400g\/\">chickpeas<\/a> (rinsed and drained)<\/li><li>3 teaspoons of <a href=\"https:\/\/www.ethicalsuperstore.com\/products\/meridian\/meridian-organic-light-tahini---270g\/\">tahini<\/a> (add more for desired consistency)<\/li><li>A squeeze of lemon juice<\/li><li>1 garlic clove<\/li><li>80g of edamame (defrosted of frozen!)<\/li><\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>For the tortilla bats<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">(Makes six small &#8211; snack sized bat tortillas)<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Two regular-sized white tortillas (can swap out for whole-wheat or gluten-free depending on preference)<\/li><\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Optional<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Two black olives to create the spider dressing<\/li><li>A squirt of dairy-free sour cream for the web topping<\/li><\/ul>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"720\" height=\"340\" src=\"https:\/\/www.ethicalsuperstore.com\/blog\/wp-content\/uploads\/2020\/10\/Jenuinely-Vegan-Recipe-Blog-2.png\" alt=\"\" class=\"wp-image-11011\" srcset=\"https:\/\/www.ethicalsuperstore.com\/blog\/wp-content\/uploads\/2020\/10\/Jenuinely-Vegan-Recipe-Blog-2.png 720w, https:\/\/www.ethicalsuperstore.com\/blog\/wp-content\/uploads\/2020\/10\/Jenuinely-Vegan-Recipe-Blog-2-300x142.png 300w, https:\/\/www.ethicalsuperstore.com\/blog\/wp-content\/uploads\/2020\/10\/Jenuinely-Vegan-Recipe-Blog-2-520x245.png 520w\" sizes=\"auto, (max-width: 720px) 100vw, 720px\" \/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Method for Spooky Salad:<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pre-heat oven to 190 degrees<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Fill a pan with water and bring to the boil.<\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Chop up the sweet potatoes into bite-sized chunks. Coat in <a href=\"https:\/\/www.ethicalsuperstore.com\/products\/zaytoun\/organic-fairtrade-extra-virgin-olive-oil-750ml\/\">olive oil<\/a>, garlic and <a href=\"https:\/\/www.ethicalsuperstore.com\/products\/suma\/suma-organic-paprika-25g\/\">paprika<\/a> and toss to cover. Place in an oven tray and bake for 30 minutes (toss halfway through).<\/li><li>Whilst waiting for the potatoes, salt your boiling water and bring broccoli to the boil.<\/li><li>Pop your <a href=\"https:\/\/www.ethicalsuperstore.com\/products\/quinola-mothergrain\/quinola-mothergrain-pearl---red-express-organic-ready-cook-quinoa-250g\/\">Quinola red and white quinoa<\/a> into the microwave for 2 minutes to warm up (or simply eat cold).<\/li><li>Once ready, combine all the above ingredients into a mixing bowl, mix together and coat with garlic and paprika.<\/li><li>Sprinkle pomegranate seeds.<\/li><li>Enjoy!<\/li><\/ol>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Method for Edamame Hummus<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Combine drained <a href=\"https:\/\/www.ethicalsuperstore.com\/products\/mr-organic\/mr-organic-chickpeas---400g\/\">chickpeas<\/a>, <a href=\"https:\/\/www.ethicalsuperstore.com\/products\/meridian\/meridian-organic-light-tahini---270g\/\">tahini<\/a>, lemon, crushed garlic and edamame into a food processor or blender.<\/li><li>Blend until right consistency. If you find the hummus is slightly dry, simply add more tahini, or lemon whilst tasting.<\/li><li>Serve and enjoy!<\/li><\/ol>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Method for the optional olive spider<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Cut one olive in half lengthways to create body shape.<\/li><li>Repeat the above then slice vertically to chop four &#8216;leg-shaped&#8217; olive slices.<\/li><li>Place atop of your hummus for desired spooky look.<\/li><\/ol>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Method for tortilla bats<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Use a bat-shaped cookie cutter to create bat-shaped tortilla. Or simply trace a bat outline across the tortillas and cut with scissors.<\/li><li>Simply place the tortillas in a pan on a high heat and flip across either side for the tortillas to crisp up into snacks.
