Wheat is harvested very early in the season whilst still young and green, and flame-roasted, sun-dried and crushed to create its signature chewy texture and smokiness.<\/p>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-8f761849 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p class=\"wp-block-paragraph\"><strong>INGREDIENTS<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><a href=\"https:\/\/www.ethicalsuperstore.com\/products\/zaytoun\/zaytoun-smoky-freekah\/\">250g Zaytoun freekeh, rinsed<\/a><\/li><li>2 sticks of celery, sliced<\/li><li>1 medium red onion, chopped<\/li><li><a href=\"https:\/\/www.ethicalsuperstore.com\/products\/zaytoun\/organic-fairtrade-extra-virgin-olive-oil-250ml\/\">2 tbsp Zaytoun olive oil<\/a><\/li><li>2 small apples, cored and cubed<\/li><li>1 small clove garlic, minced<\/li><li><a href=\"https:\/\/www.ethicalsuperstore.com\/products\/kallo\/kallo-low-salt-vegetable-stock-cubes-66g\/\">400ml vegetable stock<\/a><\/li><li><a href=\"https:\/\/www.ethicalsuperstore.com\/products\/suma\/suma-prepacks-organic-cranberries-125g\/\">200g dried cranberries<\/a><\/li><li>3 spring onions, finely chopped<\/li><li>Handful of parsley leaves, coarsely chopped<\/li><li><a href=\"https:\/\/www.ethicalsuperstore.com\/products\/suma\/suma-prepacks-organic-walnuts-500g\/\">100g walnuts, chopped &amp; roasted<\/a><\/li><li>Coarse sea salt &amp; black pepper to taste<\/li><\/ul>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"428\" height=\"733\" src=\"https:\/\/www.ethicalsuperstore.com\/blog\/wp-content\/uploads\/2020\/08\/freekeh-olive-oil.jpg\" alt=\"\" class=\"wp-image-10914\" srcset=\"https:\/\/www.ethicalsuperstore.com\/blog\/wp-content\/uploads\/2020\/08\/freekeh-olive-oil.jpg 428w, https:\/\/www.ethicalsuperstore.com\/blog\/wp-content\/uploads\/2020\/08\/freekeh-olive-oil-175x300.jpg 175w\" sizes=\"auto, (max-width: 428px) 100vw, 428px\" \/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n<\/div>\n<\/div>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>PREPARATION METHOD<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Cover <a href=\"https:\/\/www.ethicalsuperstore.com\/products\/zaytoun\/zaytoun-smoky-freekah\/\">freekeh<\/a> in twice the volume of water and let soak for 15 minutes. Rinse, drain and set aside.<\/li><li>Heat up the <a href=\"https:\/\/www.ethicalsuperstore.com\/products\/zaytoun\/organic-fairtrade-extra-virgin-olive-oil-250ml\/\">olive oil<\/a> in a saute pan then add red onions, celery and apples. Saute for 3 minutes.<\/li><li>Add minced garlic, salt and pepper to taste, toss together for another minute or two on medium heat.<\/li><li>Mix in the drained freekeh then top up with the <a href=\"https:\/\/www.ethicalsuperstore.com\/products\/kallo\/kallo-low-salt-vegetable-stock-cubes-66g\/\">vegetable stock<\/a> allowing it to bubble for a few minutes.
