Deir Ballout is known to be one of the best maftoulmaking cooperatives, thanks to the skills of their mentor, Um Hikmat, who conducts local maftoul-rolling workshops. Um Hikmat\u2019s version substitutes rice with nutty organic maftoul. Hearty, healthy and economical, this dish is many vegetarians\u2019 favourite. It exemplifies Palestine\u2019s cucina povera, or \u201cpeasant cuisine\u201d whereby humble but high quality ingredients are used to produce delicious fare that is fit for kings.<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">INGREDIENTS<\/h2>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"alignright size-large is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.ethicalsuperstore.com\/blog\/wp-content\/uploads\/2020\/08\/matfoul-olive-oil.jpg\" alt=\"\" class=\"wp-image-10839\" width=\"184\" height=\"291\" srcset=\"https:\/\/www.ethicalsuperstore.com\/blog\/wp-content\/uploads\/2020\/08\/matfoul-olive-oil.jpg 258w, https:\/\/www.ethicalsuperstore.com\/blog\/wp-content\/uploads\/2020\/08\/matfoul-olive-oil-190x300.jpg 190w\" sizes=\"auto, (max-width: 184px) 100vw, 184px\" \/><\/figure><\/div>\n\n\n\n<p class=\"wp-block-paragraph\">Maftoul Mujaddara<br>\u2022 <a href=\"https:\/\/www.ethicalsuperstore.com\/products\/suma\/suma-prepacks-organic-brown-lentils\/\">500g brown lentils <\/a><br>\u2022 <a href=\"https:\/\/www.ethicalsuperstore.com\/products\/zaytoun\/zaytoun-palestinian-hand-rolled-maftoul-couscous\/\">250g maftoul <\/a><br>\u2022 250ml <a href=\"https:\/\/www.ethicalsuperstore.com\/products\/zaytoun\/organic-fairtrade-extra-virgin-olive-oil-750ml\/\">Zaytoun olive oil <\/a><br>\u2022 1 tbsp <a href=\"https:\/\/www.ethicalsuperstore.com\/products\/geo-organics\/geo-organics-atlantic-sea-salt-crystals-250g\/\">salt <\/a><br>\u2022 1 tsp black <a href=\"https:\/\/www.ethicalsuperstore.com\/products\/suma\/suma-organic-fairtrade-peppercorns-black-25g\/\">pepper<\/a> <br>\u2022 4 large onions<br>Serves 4-6<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">PREPARATION METHOD<\/h2>\n\n\n\n<ol class=\"wp-block-list\"><li>Heat 125ml <a href=\"https:\/\/www.ethicalsuperstore.com\/products\/zaytoun\/organic-fairtrade-extra-virgin-olive-oil-750ml\/\">olive oil<\/a> in a pan, add <a href=\"https:\/\/www.ethicalsuperstore.com\/products\/suma\/suma-prepacks-organic-red-split-lentils-500g\/\">dry lentils<\/a> and roast over high heat for 3 minutes.<\/li><li>Add 1\u00bd litres of water, bring to the boil, then turn down to low heat, cover the pot for 30 minutes.<\/li><li>Heat 60ml olive oil and roast <a href=\"https:\/\/www.ethicalsuperstore.com\/products\/zaytoun\/zaytoun-palestinian-hand-rolled-maftoul-couscous\/\">maftoul<\/a> on high heat in olive oil for 3 minutes, then add it to the pot containing the lentils.<\/li><li>Add <a href=\"https:\/\/www.ethicalsuperstore.com\/products\/geo-organics\/geo-organics-atlantic-sea-salt-crystals-250g\/\">salt<\/a> and <a href=\"https:\/\/www.ethicalsuperstore.com\/products\/suma\/suma-organic-fairtrade-peppercorns-black-25g\/\">pepper<\/a>, and mix maftoul and lentils together well, and cover the pot for another 20 minutes. Add more water if needed.<\/li><li>Fry the onion slivers on high heat until golden brown and caramelised.<\/li><li>Fluff the cooked grains over a platter.<\/li><li>Top with the caramelised onions.
