Preparation: 40 minutes
\nCooking: 20 minutes (for the filling)
\nBaking: 1 hour<\/p>\n

Ingredients:<\/strong>
\nFor the filling:<\/strong>
\n1 tbsp olive oil<\/a>
\n1 onion, chopped
\n\u00bd tsp dried thyme
\n\u00bd tsp turmeric<\/a>
\n\u00bd tsp jerk seasoning mix
\n\u00bd tsp ground ginger
\nPinch of clove or allspice
\n3 garlic cloves, chopped
\n1 red pepper, chopped
\n\u00bd small Scotch bonnet chilli, finely chopped
\n165ml canned coconut milk<\/a>
\nHalf a lemon, juiced
\n230g (drained weight) black beans<\/a>
\n200g frozen spinach
\n280g (drained weight) jackfruit<\/a>, cut into chunks
\nSalt and pepper<\/a> to taste<\/p>\n

For the pastry: <\/strong>
\n110g vegetarian\/vegan white hard fat
\n280ml water
\n1 tsp salt<\/a>
\n\u00bd tsp turmeric<\/a>
\n500g plain flour<\/a>
\nSoya milk<\/a> to glaze the pie<\/p>\n

You will also need:<\/strong>
\nA loose-bottomed pie case 20cm across and 7cm deep
\nA little extra flour<\/a><\/p>\n

Method<\/strong>
\nFor the filling:<\/strong> In a large pan gently heat the oil and fry the onions for 5 minutes. Add the thyme, turmeric, jerk season mix, ginger and clove. Cook for another 2 minutes, stirring constantly, then add all of the remaining ingredients.<\/p>\n

Simmer for 15 minutes until most of the liquid has evaporated. Once cooked, break down the jackfruit further with a fork and mix thoroughly. Season with salt and pepper then allow to cool.<\/p>\n

For the pastry:<\/strong> Preheat your oven to 180\u00b0C\/gas mark 4.<\/p>\n

Place fat, water, salt and turmeric into a saucepan and gently heat until melted.<\/p>\n

Put the flour into large bowl and stir in the melted fat mixture a little at a time. Mix the flour and fat mixture until combined, then knead well until smooth.<\/p>\n

Roll out two-thirds of the pastry on a lightly floured surface and carefully line the base and sides of your pie case.<\/p>\n

Add the filling, then roll out the remaining dough to make a lid and place on your pie. Pinch together the edges of the pastry to seal the lid, and decorate as you wish. Brush the top of the pie with a little soya milk.<\/p>\n

Place your delicious vegetarian pie onto a baking sheet and pop into the oven for 1 hour. The top should be golden and crisp to the touch when cooked. Leave to cool slightly before slicing and serving.<\/p>\n
