I keep three bouillons/stocks in my kitchen: Vecon (a strong paste) for when I want something hearty, this Marigold bouillon, and the purple Marigold bouillon, which is similar to the main green one but is vegan and has a much lower salt content than the rest of the range. The green one is the best-known and has a light vegetably flavour which is good to add to dishes and soups, and makes a reasonable hot drink on its own. Unfortunately, it's not vegan, but the brown and purple ones are. The purple one, as far as I can recall, is very similar to the green in flavour. Marigold bouillons are well known for having natural ingredients producing a clear flavour, rather than being loaded with MSG like most conventional stock cubes. The brown one has rather a different character to the usual flavour. It's not just organic, they've altered the ingredients as well. (Incidentally, it's less likely to clump together in its tub than the purple version.) The main difference is that the brown bouillon has a fair bit of yeast in it and thus a definite yeasty flavour. A pinch is excellent in Béchamel sauce, and I rely on it when creating a cheesy flavour in a vegan sauce or similar dishes. It's great in onion soups, and I like it in a basic soup I make which involves onions, quinoa flakes, and frozen peas. I don't always want the yeasty flavour, however, and if I were just using it to make a hot drink I'd use the purple variety. I'd say that I use the brown variety about equally as much as I use the purple variety.

This stock has great flavour. It doesn't taste artificial like some of other stock cubes you can buy. I would definitely recommend it to anyone.
