More Information:

This is an extraordinary place. The Mas de Daumas Gassac wines come from some 40 hectares of organically-farmed perfectly drained volcanic soil under the thick garrigue scrub and shrubs covering the Arboussas hills. The outstandingly unusual terroir was discovered in the 1970s by the great academic, Henry Enjalbert, then in the Chair of Geography at Bordeaux. At 1650 feet, the altitude means cooler growing conditions. At night cold air flows in from the even higher Larzac (2790 feet). The vines have also been planted to face north thus reducing the direct exposure to the sun. The result is that this lengthens the growing season and helps the grapes to develop more concentration. The underground cellars were created in the foundations of a Gallo-Roman mill and date back 1000 years. There are two underground cold water springs which provide natural air-conditioning! This also keeps the temperature down during the alcoholic fermentation and lengthens it by a few days. Rather like the Slow Food movement, wine actually tastes better if it has been made slowly! All those chemical reactions during fermentation take place at a leisurely rate and greater complexity is achieved.
